sweet potato ?
My secret for tasty stew is a sweet potato. When I can find small ones. Seems these days all I can find are really big ones. Can I cut one in half for later use.

I always cut mine up, even for baking. There should be no problem just wrapping the extra and putting in the refrigerator. And thanks for the stew tip!

Sure you can cut sweet potato to use later. I find the cut end will discolour a bit but I just cut and discard a sliver off the end.

I know what you mean about big sweet potatoes. My DH does not like them and it is hard to find a little one just for me. So, I always bake me a big one - cut in half and eat one half and put the other in the refrigerator in a zipper bag and reheat it up in the microwave for another meal and it tastes just as good as if I just cooked it. HTH

My mom cooks them peels them, then freezes them in smaller portions. She microwaves them covered half way in water and a lid to cook them. Be sure to prick them a few times. Microwave 8 min then increments of 5 until done. Very moist and tasty.

Great idea.......I never thought of putting a sweet potato in stew. I will have to try that next time I make it.

Keep in mind the sweet potato cooks faster. I add it near the end.

You can easily cut up the sweet potato and use the remaining half after 2 to 3 days provided you have refrigerated it properly so that it does not become black. You can also make a sweet pie using them.
