Perhaps a couple of weeks ago someone sent in a recipe using a package of spice cake mix and (I think) one other ingredient. But I lost track of it and now would love to find it again. Somehow pumpkin sticks in my mind as the additive. Does anyone remember - or did I dream this whole thing? Thanks.

M.E.H. 11-12-2010 02:34 PM

Yes, it was pumpkin.

watterstide 11-12-2010 02:37 PM

did you try the search feature?

you really need to "bookmark" right here, on this board, the things you want to save! i started doing the bookmark thing here, a few weeks ago, because i got tired of looking for what i can't remember! lol

pamelajean73 11-12-2010 02:43 PM

Yes, it was a box of spice cake mix and a can of pure pumpkin. Mix together and bake as indicated on the box!

I made it last week and it was a family hit! Even my 3 and 5 yo kids loved it!

watterstide 11-12-2010 02:50 PM

ohh sounds yummy!!!

What size can of pumpkin?

SunQuilts 11-12-2010 04:39 PM

thanks, folks. I did search before posting my request for help but wasn't successful. But I will try to remember to bookmark from now on. Thanks again.

AlwaysQuilting 11-12-2010 04:48 PM

Any eggs needed?
Butter?
Water?
I'd love to know more details.

pamelajean73 11-12-2010 05:31 PM

It is the smaller can - 15 oz? don't have one to check the exact size. Don't add anything else. Just the pumpkin. At first I thought I would have to add more liquid, but it does mix all together.
Someone on the weightloss with a gift thread posted it and said that for Weight Watchers it comes out to 4 points a serving.

Hi i made the recipe as well eeryone loved it there was one other ingredient chocolate chips (i found some cinnamon chips at the grocery store).

NancyG 11-12-2010 09:28 PM

I did a search and found this recipe. I think this might be the one you are looking for...........

I follow Weight Watchers and this recipe is a hit there, I do add 2 egg whites to the cake mix and soda it does make it a tad bit better and doesnt add any extra fat or calories.
If you like pumpkin ..
1 boxed spice cake mix
add 1- 15 oz can of pumpkin (PLAIN) and 2 egg whites, 1/2 cup water and a teaspoon of pumkin pie spice. This is so good especially this time of the year. I make it in a muffin tin w/o papers.

SunQuilts 11-13-2010 06:26 AM

Thanks, everybody. The recipe I saw called for only the pumpkin to be added but I like the sounds of the WW version with egg whites. I may try both. Thanks again.

CarrieAnne 11-13-2010 08:48 AM

Ive made it too, and its really good, and easy!

carlasuewho 11-13-2010 09:37 AM

Must be the season for this! I jotted down the recipe from one of the blogs (sorry, don`t remember which one, failed to jot THAT down).

18.25 box Spice cake mix
15 oz pumpkin puree
1 tsp cinnamon
1/2 tsp nutmeg
Mix till smooth, put in lined muffin tin, sprinkle with brown sugar. Bake @ 350° aprox. 22 minutes or until toothpick comes out clean.

We had them last week and they were yummy!

watterstide 11-13-2010 12:26 PM

Notes:
Moist, low calorie spice cake.

Servings: 20

Ingredients:
1 box Spice Cake Mix
15 oz. can of pumpkin
½ cup water

Directions:
Combine ingredients and mix well with mixer. Pour into lightly sprayed 9×13 baking pan. Bake at 350 degrees for 32-35 minutes. Cool. Cut into 20 pieces. Serve with fat-free Cool Whip. 1 point per serving.
For bundt pan, spray lightly and bake 38-40 minutes or until done. Can heat 2 Tbsp. of canned cream cheese frosting in microwave and drizzle over cake. Serves 20. I point per serving.
I like to divide batter into lightly sprayed muffin tins and bake about 20-23 minutes. This way it’s already portion ready and easy to grab for breakfast.

I did save the link for the one with only two ingredients. It was for pumpkin cookies. When I went back to the link, it comes up with website cannot be found. I don't know why it is gone but it is.

It was the cake mix and the small can of pumpkin. I baked them for about 14 minutes at 350 degrees. The second time I made them I added a cup of plumped raisins.

stitchntime 11-17-2010 06:21 PM

I have made these cookies also, but I added cinnamon chips to the cake mix and canned pumpkin - they were a big hit at work.

That sounds good too!

gmaybee 11-17-2010 08:19 PM

I use the cake mix and one 15 oz can of pumpkin. I bake mine into muffins. Then I put cream cheese frosting on them. It's one of my husband favorites and so easy.

southparkmom 11-18-2010 07:57 AM

Is it just angelfood cake mix and crushed pineapple, sounds sooooo good and not a lot of calories.

Slow2Sew 11-19-2010 10:51 AM

Made pumpkin muffins last weekend from the spice cake mix and one can of pumpkin; then added extra pumpkin pie spice, raisins & walnuts. Yummy!

Sounds Nummy!!!

Lneal 11-21-2010 07:11 PM

For a really good treat don't forget to top your cake serving with Cool Whip! I like to keep my cake in the refrigerator.
My recipe calls for 1 box spice cake, 15 oz can pumpkin, and 1/2 cup applesauce.

dotcomdtcm 11-26-2010 06:57 PM

I use a can of pumpkin (not filling) and a box of cake mix to make truly wonderful muffins. Dotty DD adds mini choc chips

violets4me123 11-09-2011 12:52 PM

Just a box of spice cake and only the small can of pumpkin puree? Really interested in making this really soon. Thanks!
