Hubby did the prep work and I made 4 pints of zucchini relish last night and 14 pints tonight. I'm tired. I think I'll give the rest away. Ugghhhhhh |

I make a cucumber, mandarin orange, sweet pepper/onion relish to top hot dogs, or white fish.. it is simple, tasty, and yet different than most relishes..

i do this way with the cucumbers we grow as well.. so good.

My favorite summer sandwich is ...Fresh bakery rye bread, spread with cream cheese, slice cucumber on top..sprinkle with celery salt and a bit of dill. Or you can use lemon pepper. This is an open face sandwich... Yum!
