Peel them, score them down the sides with a fork. Slice thinly in a bowl along with thinly sliced sweet onions and chunked tomatoes. Add vinegar, oil, salt and pepper, or Italian dressing. Yum.

CarrieAnne; I'm so glad to hear of someone else that enjoys eating cucumbers, sliced (after being marinated in salt and vinegar), put on white bread and butter and eat! Yum-m-m. I'm going to have to try the Raspberry vinegarette. Thanks for the tip.

I love to just peel them and take a salt shaker and eat them. Not really getten enough out of the garden yet. Not enough rain.

My mom's recipe:
Slice cucumbers really thinly after peeling skin off. Slice an onion really thinly also. Put sliced cucumbers and onion in a bowl and salt them. Refrigerate overnight or for a few hours. Poor liquid off. Then take whipping cream and add vinegar to taste. Put over cucumbers. I usually slice about 6 cucumbers with an onion. Then take a coffee mug and fill 3/4 of the way with whipping cream and then add a few teaspoons of vinegar. YUM!!!

Years ago I made a Cucumber Pie because I had sooo many fresh from the garden. I was pickled out..
I sliced the Cuke long wise and scooped out the seeds then I simmered the cukes until they were tender. Then drained them and use my old standby pumpkin pie. I used Cukes instead of Pumpkin. It was a keeper!!!! Try it and let me know what you think.

Ps. You can also steam them, sprinkle some parsley, salt and pepper and butter them. Another goodie.

I think whipping cream with vinegar makes sour cream. :) So I bet either one would have similar results.

Tomatoes, cucumbers,onions and green peppers. This sounds great! I'll try it soon now that our garden has started producing.
