This is also my favorite recipe for cucumber: sliced, a little salt and pepper and sour cream, garnish with chives from the garden. Very yummy.

I love refrigerator pickles. Just slice cucumbers thinly, put into container with equal parts oil and vinegar, salt and pepper to taste. Add sugar for sweeter pickles.
The other thing I like to do is stuff them with tuna salad. I hollow out the cucumber and put the seeds into the tuna. I only use a little mayo in the tuna. You could make chicken orchard salad too. I usually eat these sliced up with a stuffed tomato to use the rest of the tuna and some big leaf lettuce. Of course, I love cucumbers as a snack. Just the right amount of crunch and cool. |

Yes! I would like the recipe for bread& butter pickles, these are refrigerator pickles. and thanks beforehand! now I need to find a good recipe to share!

3/4 cukes peeled, cut in half, scoop out seeds if they are big or 6/8 kirbys, salt and place in colander to drain for about 2 hours. Place in a bowl add thinly sliced red or white onions, garlic powder and sour cream. Refrigerate . My grandchildren love them!!

This recipe was used my mother and my aunt for may years. MOM's PICKLES slice enough cucumbers to make 3 gallons. 1 cup pickling lime (Mrs. Wages) also know as builders lime Sugar (white) vinegar white pickling spices sterile canning jars Place sliced cucumbers in large bucket, EX. 5 gallon bucket works best. One cup lime plus enough water to cover the slices. Let this soak overnight. Next morning rinse/wash slices until water is clear. Lime will feel gritty on the slices. Place cucumber slices in large pot, add 1 1/2 cups sugar to each 1 cup of vineger. Do this until covered. Put pickling spices in a cloth bag, an unused knee hose works good. Let soak 3 hours. Then bring to a hard boil for 20 minutes. Pack in sterile jars cap and let cool. I like to cover the hot jars with a dish towel while cooling. Enjoy If a you have any questions please let me know. |
Make benedictine.YUMMMMMMMMMMMM!TAKE THEJUICE OF A CUCUMBER AND AN ONION.Add to a cube of cream cheese,don't get it to thin.ADD A DASH OF GARLIC SALT.THEN ADD GREEN FOOD COLORING FOR A SOFT GREEN COLOR. USE AS A DIP OR EAT it on a sandwich this is mainly a southern thing.

CUCUMBER DILL DIP
1 8 oz. pkg. cream cheese 2 cucumbers, peeled, seeded, and diced 1 cup mayonnaise 1 tsp. dill weed ( I used dried) 1 Tablespoon lemon juice ( 1/2 tsp. hot pepper sauce - optional) Beat cream cheese til soft and smooth. Add rest of ingredients, mix well. Chill. Serve as dip for Ritz crackers, or other crackers or chips. Can make a day or 2 ahead. Keeps several days. |
