What's for dinner?
 
Today I am making chicken chili.

3-4 cups cooked chicken (I buy the Costco chicken that they take off the bone and sell in a big package)
1 c. chopped onions
1 c. chopped celery
1 c. chopped carrots
3 cans of white beans (I used to soak my beans and cook them, but I got lazy)
taco seasoning to taste (I use about 2T since my stomach can't handle a lot of spice)

Put it in a crock pot and quilt :). I freeze the left overs since there are only two of us, but for some reason this tastes better when made in a big batch.

hamburger on a bun with ketchup. mayo, onion sliced thin and tomato. homeade french fries. chili chicken sounds good too

The chili sounds great. We are in WA state so we are having grilled salmon which without shipping costs is relatively inexpensive.

Chicken Spaghetti: Cook chicken breasts in crockpot then remove and shred. Set aside. Undercook 1 lb. spaghetti, drain and set aside. In crockpot combine 1 can RoTel tomatoes (with chiles) 1 can mushroom soup, 1 can cream of chicken soup, sliced mushrooms, 1 lb. original Velveeta cheese (cubed up), dried onion flakes, black pepper and 1/2 cup chicken broth. Stir in shredded chicken and cook on low for 2-3 hrs. Add spaghetti about 30 minutes before serving. Warning: makes a lot ! I buy fresh mushrooms on sale, slice and freeze on baking sheet then store in plastic bag. Much better than canned.

Yesterday: Honey baked ham (frozen from Easter), au gratin potatoes, peas, 5 cup salad (like an ambrosia), and sliced strawberries for dessert.

Vegetarian tonight, just because.....
lots of fresh spring asparagus with my grandma's Hollandaise sauce,
potato salad,
some quickly sauteed fresh baby spinach with lemon juice,
sliced vine-ripened tomatoes,
raw carrots sticks,
and anything else that's in the hydrator drawer in the 'fridge.

Reminds me....gotta make some sweet tea!!

Left over chicken in dark southern gravy over rice, field peas and homemade biscuits ! Top it off with a piece of lemon coconut cake my sister-in-law made for us! Yawn ... Now it will be time for tv and bed ! Happy quilting you all

I made Italian inspired Meatball soup in the crockpot.
32 ounce beef broth
1# frozen meatballs (I had large bag so used 36)
1 can diced tomatoes
1 - tsp. Italian herbs
2 cloves chopped garlic
Cook 4-5 hours on low
Add 3 cups chopped Kale
Cook another hour

Sprinkle Parmesan to serve

Fresh mixed greens salad with chunked roasted chicken, celery, strawberries, candied pecans, feta cheese, and pomegranate dressing....it's over 80 degrees here today!!!

DH is at work so I wandered around and around the kitchen trying to decide what to fix for myself. I am not ashamed to admit I finally ate a bowl of Trix cereal:) My grown kids were astounded to find sugary kids cereal in my pantry since I would never buy it for them.

Roast in the crockpot now. Will serve with mashed potatoes, carrots, sweet tea, vanilla ice cream.

The Roast

1 (4-5 lb) beef chuck roast
1 envelope ranch dressing mix
1 enveolope au jus mix
1/2 cup butter, cut into tablespoon
5 Pepperoncini peppers (comes in a jar like pickles) do not omit these

Place roast in crock pot. Sprinkle with ranch and au jus mixes. Place butter on top. Add peppers. Cook on low for 8 hours or until meat is very tender.

I pre heat my slow cooker crock with boiling water and use a slow cooker disposable liner. Pre heating takes an hour off the cooking time.

Birthday dinner at a restaurant of my daughter's choosing. She's going to be 27 and is "all about trying new things and new places" ( her words). She will be doing the mechanical bull riding on her own with girlfriends. Bull riding of any kind has never been on MY bucket list. ;)

I made roast chicken with a rosemary/thyme/garlic compound butter stuffed under the skin of the breast. It was wonderful. The best roast chicken I've ever made. Here's the recipe and video..... Ultimate Roast Chicken

Old fashioned beef stew. (BHG recipe)
Roasted potatoes with rosemary, sea salt & a little olive oil.
Steamed endive.
Fall fruits compote cooked on stove. (Apple, pear, plums, ginger, lemon juice and a little brown sugar.)

It's definitely soup and chili weather, even here in AZ - last night I made a super quick ground beef chili (by quick it still took an hour, but not hours, to cook!) and then I turned around and made a dry rub and roasted a chicken so I can make soup soon. I am *not* always that productive!

Let the chicken cool and simply had warmed fresh bread with chili. Sometimes the simple things please most.
