Tonight is baked stuffed zucchini and a salad. Stuffed with a corned beef hash and cheddar cheese.

I found a recipe for slow cooker chipotle honey chicken tacos and that was delicious.
met lived in south Louisiana for over 40 years and love the food. I found yet another Ted beans and rice recipe for the Instabt pot and that was last night and so far our favorite. Tonight is pork chops in the air fryer and I haven't figured out the sides yet

It's pretty toasty warm here so not going to heat up the house any more. Barbecued chicken kebabs with mushrooms, red pepper, onion and zucchini. Meal on a stick LOL

100 plus temps here this week so not turning on the stove to cook anything. That's my excuse anyway. We are having chicken breast strip fried crispy in air fryer. Can be put in a salad or tortilla wrap.

Severe thunderstorm and torrential rain happening right now. Kebabs on the BBQ turned into oven roasted chicken and veg sheet pan supper. Still yummy!

Bought a pint of oysters on the way home from beach. Oysters Rockefeller! They were absolutely the best ever. I fried the whole 12 ounce package of thinly sliced bacon, then chopped it for the topping!
While it fried, I melted the stick of cream cheese in the microwave with a healthy (1/4- 1/2 cup) serving of Picante Sauce. Then add 1/4 c Parmesan cheese and wilted spinach:
Drained the fat from the iron skillet, and dumped baby spinach in to wilt it from already hot pan. (Large rectangle box of spinach)

Tonight is stuffed bell peppers and rice. One of my husband's favorites. I use to make the meat stuffing but now I use frozen already seasoned angus meatballs. Add the sauce and top with Burrata mozzarella and bake. My husband said they are as delicious as always.

We have been low on groceries! Husband is working a more normal schedule and so we are back going to Costco on Saturdays... We had a big storm last night, more storms this morning, and probably storms again for the evening so aren't planning any outdoor cooking. Today was bigger than normal shopping and time to renew membership for the year. Yikes! Anyway, got what we wanted and answer to the thread is:

Stopped at market today. Bought fruits and vegetables, 1 loaf of sour dough bread, milk, canned beans, cat supplies and a single portion of salmon. Thought it looked like a single woman's basket.
Dinner was salad of lettuce, basil from garden, ground cherries from garden, left over rice and salmon. For dessert had cooked blueberries on pound cake (left from friends who brought dinner last night). Cooking for 1 changes dynamics for planning dinner.

Lunch was with friends at a restaurant at a golf course. My cooking is better. BUT having someone else cook and serve you is awful nice. And the company was great.

Tonight is "noshing night." Lavash, Spanish style chickpeas, cucumber salad, some smoked oysters, a bit of leftover chicken cacciatore, a fruit salad, some yogurt cheese, lots of hot sauce and olives...I don't know what else I'll add to the platters. I just prepare them earlier in the day and set them out for when whomever gets home.
