Tonight is basic burger patties. No buns. Also, a couple Costco (frozen) salmon patties. We stopped at our local butcher shop which is on the way to/from the gym and picked up pre-formed burgers. Came in the door and hit the ground running, I lit the grill, and hubby is trying to mow the back lawn while it is still light enough and before the cold weather moves in. Temperature is dropping and pretty good chances of snow this weekend.
We did get a small turkey, it might not be thawed in time, but I'd like to brine it. Nice thing is with the two of us, we can do it any day. |
Homemade vegetable beef soup and cornbread. It's wet and chilly here today. Already dark and it's only 4 pm.

This week is tough because I'm also making many of the Thanksgiving dishes for Thursday. The fridge is packed and the kitchen is a mess. I think that I'll just make some chili with pork today. I have no idea when the guys will be home from work, so it can just simmer on the stove, getting better and better, until they arrive. I'll probably make a quick cornbread to go with it...maybe a small salad.

Yesterday was Meatless Monday, so we had squash ravioli with brown butter sauce and tossed salad. They are easy to make, using won-ton wrappers from the grocery.
Another easy and healthy meal is egg roll in a bowl - shredded cabbage (either in the package or shred yourself), grated carrots, ground protein of choice, lite (reduced sodium) soy sauce. You can add whatever additional vegetables you like. Ready in 15 minutes or so. I will admit that I often make enough of whatever so that we can have leftovers another day. I don't care for packaged foods, want a good meal, but don't want to cook every day. |

My husband was put on a low salt diet, very low salt no more than one teaspoon a day. It's changed the way I cook. I have to cook basically two meals. One with no salt and one with salt. Just adding salt after cooking doesn't work. It's not that hard though I divide the food in half and just use more pots and pans. I bought two small crock pots. LOL

No Thanksgiving dinner for us. Hamburgers and homemade Mac'n cheese. Tapioca pudding for dessert.

It's black friday, traffic horrific so no casual trip to store. No TG leftovers here. And still recovering from overeating and huge sugar overload. Since today is trash pick-up won't do fish. What's in the freezer? How about the garden? Just salad greens. Any new recipes I want to try?
Have carrots and celery. Maybe chicken soup. |
A rare steak for me, medium rare for husband, a baked potato, roasted brussel sprouts and sauteed mushrooms with a 1/2 teaspoon soy sauce added for flavor.

Left over turkey tonight... We went out earlier and got lunch at the lunch counter at our local butcher shop. I had a "prime rib sandwich" which was a huge piece of meat with a tiny bun. Is a thing they do here with Tenderloin Sandwiches (typically a breaded fried, pounded thin plate-sized piece of pork). Hubby combines two of their special burgers (no buns) for 1 sausage patty, 1 beef patty, 1 fried egg, bacon and cheese.
The turkey came out well, it was mostly a test of the brining -- I've had some really horrible home brined turkeys and I've had some good ones. I'm still working out the recipe for this 14 lb bird I did 12 hours for the soak, 1 cup kosher salt, 2 cups apple cider vinegar and about a gallon and a half of water, plus some herbs. Let it dry and then put on the smoker for about 7 hours. Finished nicely without too much smoke or too much salt. |
