Son in law made spaghetti sauce. So we are boiling pasta and making a salad.

I've been craving Oysters Rockefeller. I purchased these cute seashell cups, which replicate the oyster shell. I make my own Spinach Picante, then top with an oyster, parmesan, butter, and bacon. Yep, gonna head to the island for fresh oysters.

Pasta with home made sauce and meatballs! I've been making huge batches for 40 years; freeze in quart containers. The day I make it is rather busy - I grind my own beef, pork and veal for the meatballs, make a panade, then about 20 quarts of sauce with meatballs.

It's worth it, though, when we have pasta. Take a quart out, thaw, cook pasta and a vegetable or make salad and dinner is delicious and quick.

When our daughters were home, we probably had it once a week. Now, not so much.

Today, I am brining a whole chicken. This afternoon DH will spatchcock the bird and BBQ on the pit! Will pair with a salad.


Try shaken baking the pork tenderloin. We buy the apple smoked tenderloin and use the pork shaken in bake.

We do like pork tenderloin. I usually get mine at Trader Joe's because they are just the meat with nothing injected. I make them a lot of ways.

tonight is a meal I've made before. The recipe calls for cannellini or other white beans drained, fresh garlic, tomato paste and a lot of cheese. In an iron skillet. I usually add Italian sausage chicken type. Tonight it is Aidells chicken mozzarella. Odd combo but we like it. Recipe from NY Times.

We like to take some left over turkey, dressing add some cranberries if it doesn’t have any. Add some gravy mix together. We use Pepperidge farms pastry puff and make as big as you want. A turkey, dressing hot pocket like. Very delicious.

Chicken's in the freezer. It stayed there.
There was a fresh pineapple in the fridge that needed to be used. Cooked P/A salsa with salmon. Was great. And fresh lettuce from the garden. It'll bolt soon. Use it or loose it.

Chicken drums are in the fridge, swimming in a tandoori marinade. I would love to throw them on the BBQ but it's not quite warm enough to drag it out of the garage (I know a lot of folks barbecue in their garages but it has always scared me) so they will go in the air fryer. I'll add some curried mixed veggies, a naan and some home made raita.
