DH loves to smoke a brisket. Will start slow cooking in the morning in the smoker and finish in oven. He likes a sliced brisket sandwich, while I prefer a stuffed baked potato topped with chopped brisket! Prepare it today and start tomorrow.

All the kids and grands are coming for supper tonight. London broil, mashed potatoes with gravy, broccoli, yeast rolls and banana pudding. Pudding made and in the fridge now. I use Paula Deen's Not Your Mama's Banana Pudding recipe. Makes a big dish.

I made a huge lasagne from scratch last night, to feed the extended family. Everyone ate a lot, but thank goodness there is still plenty of leftovers for dinner tonight too!

Sewbizgirl, I love lasagna. I have developed a low carb Spinach Lasagna recipe by basically substituting fresh baby spinach for the pasta, and small curd cottage cheese for the ricotta.

I love Oysters Rockefeller! A long time ago, I made a vegan version. I forget what replaced the oysters, mushrooms maybe? Anyway it was alllllmmmmossst as good as the oyster version....but not quite.

Tonight I get a triple bonus as I don't have to cook and we are ordering pizza and brownies for dessert!! Tomorrtow's lunch will be leftovers.

The Rockies were a-mazing. One pint yielded 24 servings on Club crackers!

Last night, we had grilled mahi mahi with Pineapple Habanero sauce and oven broiled vegetables. The grocery store sells individually packaged frozen fillets, and they only take about half an hour to thaw in water. Then made Splenda ice cream with almond and vanilla extract in the Cuisinart ice cream machine.

It's Tuesday-no cook dinner nite-Papa Murphy's Pizza $10 Pizza Nite.
