Here's the recipe for Zucchini Bread: 1 (18.25 ounce) box spice cake mix 3 eggs, beaten 2 cups grated zucchini (don't drain) Mix all ingredients to moisten, then beat 3-4 minutes to blend well. If it seems a little dry, add 1/2 cup applesauce. Divide evenly in 2 greased loaf pans. Bake at 350 degrees F for 55-60 minutes until it tests done with a wooden pick. NOTE: If you can't find spice cake mix, use yello cake mix and add 2 1/2 teaspoons apple pie spice mix. Hope this works for you. Good luck! |
Thank you so much everyone. This will really help. I have two cookbooks for recipes for things that you can make from cake mixes but there is none for zucchinni bread. I do have a spice cake mix on hand, so I will try this in the next day or so. We have a Community Garden at church because we also help supply food for the food pantry in our area. My zucchinni is in the garden there in my little spot.

Carol when I went to pick my zucchinni on Sun., it had all dried up from lack of rain. So I am w aiting again for somemore to come on the vines. I will let you know. I may end up buying some at the store or Farmers Mk.

That's too bad. I bet the heat ruined lots of gardens - farm crops, too.
I know what it's like to have a taste for something and then not be able to have it. I think I'd go to the store! |

One of our church members was just in Pittburgh studying for the Stephens Ministry Program. We are trying to get it started at church. In fact Jims sister lives there and he was staying with her while they learned the program. the only thing that has survived in my garden are the tomatoes, so far. Ingrid |

Glad to hear that at least your tomatoes survived the heat. They are not much good for zucchini bread, but they are wonderful with a little mayo and a thin slice of sweet onion between 2 slices of white bread! Carol |
