I am looking for a rec ipe. I would like to make a zucchinni bread made from a quick bread mix such as Nut Bread etc. Does anyone have one that they will be willing to share. I have an abundance of zucchinni coming in the garden.

Yes I have done a research and could not find a recipe. That is why I have gone to the forum.

Dear East Side,
I just checked the third recipe down and it is from scratch. I want a recipe where you just add the zucc. to a bread mix. I have trouble standing for long periods of time and I need something is quick.

If you google "zucchini bread from cake mixes", you'll find lots of references. I found one for you which may fit the bill for you. It's from Recipe Gold Mine and you can find it and others at http://www.recipegoldmine.com/cakemi...ini-bread.html

Here's the recipe for Zucchini Bread:

1 (18.25 ounce) box spice cake mix
3 eggs, beaten
2 cups grated zucchini (don't drain)

Mix all ingredients to moisten, then beat 3-4 minutes to blend well. If it seems a little dry, add 1/2 cup applesauce. Divide evenly in 2 greased loaf pans. Bake at 350 degrees F for 55-60 minutes until it tests done with a wooden pick.

NOTE: If you can't find spice cake mix, use yello cake mix and add 2 1/2 teaspoons apple pie spice mix.

I grate the zucchinni with a large grater blade and put it in the freezer in premeasured containers for baking the bread etc. I have had some for over a year and it is still good and makes very good bread.

It's not from a quick bread mix, but it is the best recipe EVER - From my mama's kitchen. And it IS better with raisins.

Zucchini Bread

2 cups sugar 1 cup Wesson oil
3 eggs 1 teaspoon baking soda
3 cups flour ¼ teaspoon baking powder
3 teaspoons cinnamon 3 teaspoons vanilla
1 teaspoon salt ½ cup chopped nuts
2 cups coarsely grated zucchini

*Options: use 1 cup of nuts instead of ½ cup, and add 1 cup raisins (recommended)

With a whisk, mix together flour, salt, baking soda, and baking powder and set aside. Beat eggs, sugar, oil, vanilla and cinnamon until smooth. Gradually add flour mixture. (Batter will be thick) Add grated zucchini and mix well, adding nuts and raisins. Fill pans 2/3 full and bake at 350° for 1 hour. Insert knife or toothpick to insure center is done. Yield: 2 loaves
