This is a really good pumpkin pie that's different! I've experimented with many varieties and I like this one. My favorite is a no bake but can't find the recipe. Will post as soon as I find it! After trying that one, I said I would never go to the trouble to bake another one because it's just that good! I made a double layered one once and it was out of this world but a lot of trouble.

This recipe has ice cream in it and for that reason you may have a problem with the middle settling so I would just ensure you bake it long enough (according to your type oven) to get that middle part done. Test it with a toothpick or slice with a thin blade to check the middle.

Pumpkin Pie

1-1/2 pints vanilla ice cream, softened
3 eggs
1-3/4 cups pumpkin
3/4 cup sugar
1/2 tsp. salt
1 tsp. gr. cinnamon
1/4 tsp. gr. ginger
1/4 tsp. gr. nutmeg
1 (9 or 10-inch) pie shell, unbaked

1) Preheat oven to 425 deg.
2) Soften ice cream near oven
3) In bowl, whisk eggs, stir in pumpkin, sugar and spices. Mix in soft ice cream til smooth. Pour into shell.
4) Bake for 15 min., reduce heat to 350 deg. and bake for 30-40 min. or until set. Do the toothpick test to ensure doneness! Enjoy to the max!!! :-D :-D

I found a no bake pumpkin pie....don't know if it's the one? From cooks.com

NO BAKE PUMPKIN PIE FILLING
2 ½ c. cooked pumpkin
2 c. milk
1 ½ c. sugar
4 tbsp cornstarch
2 eggs
1/2 tsp. salt
1/2 tsp. cloves
1/2 tsp. ginger
1 1/2 tsp. cinnamon
1/4 tsp. nutmeg
1 10" baked pie shell
Combine all ingredients in heady duty pan, consistently stirring. Bring to a boil over medium heat until thickened.
Pour into pre-cooked pie crust and let cool before refrigerating.
