I am going to make peppernuts this year for Christmas.
The recipe calls for anise extract......... can I use anise oil and if so how much would be the same as the extract????
Recipe calls for 1 tsp. extract...........

Here's the answer:


Oil Vs. Extract
•Anise oil and anise extract can be used interchangeably in most recipes with some modifications to measurements. One part anise oil is equivalent to about four parts anise extract. Therefore, if a recipe calls for 1 tsp. of anise extract, use just 1/4 tsp. of anise oil.

Wouldn't we all have a great cookie exchange? Both our DDs do this & always sounds so fun.

After you make them - keep them stored separately from other cookies- until you put them on a plate. The other cookies absorb the smell and you dont want everything smelling like Anise cookies. I learned this from experience. J

Wish I'd known this when I made the world's strongest anise pizzelles (sp!?) last Christmas! Used the same amount of oil as when couldn't find the extract. I don't recommend it...

I did the same thing with my pizzeles the year before last. The whole room smelled like anise but it is a good thing we like that smell and the cookies were terrific.
