Some of you may remember all that Kahlua we brought back from Mexico. Well, here are some of the recipes where I use Kahlua.

Kahlua Cocoa Balls

1/2 c. Kahlua
1/4 c. light corn syrup
1/3 c. chopped candied cherries
1/3 chopped golden raisins
1 c. powdered sugar
1/2 c. unsweetened cocoa powder
2-1/2 c. vanilla wafer crumbs
1 c. finely chopped pecans

Powdered sugar, cocoa powder, coconut, chopped or ground nuts for rolling.


Combine Kahlua with syrup and fruits. Blend sugar, cocoa, crumbs and pecans. Combine mixtures. Shape into small balls. Roll in desired coating. Freeze or store in airtight container. Makes 4 doz.

Kahlua Caramel Popcorn

2 quarts popped corn
2 Tbsp. cider vinegar
1/2 cup Kahlua
3 Tbsp. butter
1 cup sugar
3/4 cup Cashews

Keep corn warm in low oven. Heat Kahlua, sugar and vinegar to boiling, stirring til sugar dissolves. Add butter and boil just to hard crack stage ( 300 F ). Mix cashews into warm corn and pour syrup over stirring to coat evenly. Cool. Can be stored up to several weeks in airtight container, but DO NOT refrigerate. Yield: 2 quarts

Kahlua Date Nut Loaf

1 box (17 oz.) date bread mix
1/2 cup Kahlua
3/4 cup chopped walnuts
Kahlua Glaze, below

Grease & flour bottom of loaf pan. Prepare mix as directed except use half the amt. of water and substitute Kahlua for the other half. Stir in 1/2 cup walnuts. Pour batter into pan and sprinkle with remaining nuts. Bake at 350 F. for 45-50 min. Turn out and while warm, drizzle with glaze. Can be made in advance and frozen. 1 loaf.
Kahlua Glaze: Beat 1/2 cup powdered sugar with 1-1/2 TBSP. Kahlua until smooth.

Black Russian Cake (Microwave)

1 box ( 2 layer size) Chocolate cake mix
1/4 cup Kahlua
1 pkg. (3 oz.) Instant Chocolate Pudding mix
1/4 cup Vodka
4 eggs
3/4 cup dairy half and half

Blend all ingredients & divide batter between 2 (8-inch) dishes lined with greased wax paper. Microwave each layer on HI 5 to 6 minutes. Let cool. Peel off wax paper and frost.

Black Russian Frosting

1 lb. confectioner's sugar
2 Tbsp. Kahlua
2 Tbsp. Vodka
2 Tbsp. dairy half and half
2 Tbsp. butter

Mix all except butter. Mixture will be stiff. Put butter on top and microwave 1 to 2 minutes until butter has softened and mixture can be beaten smooth.

Brandy, Kahlua, and IceCream, blend in a blender pour into glasses and hit it it with whipped cream and sprinkle with nutmeg.

A brandy Alexander yummmmmmm!!!!!
