    Default Soba Noodle Soup

    I made this last night and it was a hit, even with my son, the junk food eater. You can vary this in many ways...use whatever you have in the fridge, or pantry. I have jars and jars of miso paste that I made last spring and also the previous spring. It's full of protein and is fermented, so there's lots of pro-biotics in it. You can buy miso. Look in the produce or Asian section of your grocery store. The stuff in the store has probably been pasteurized, so the fermentation has been halted, but it still tastes good.

    I don't have a specific recipe for my brothy, soup base, other than starting with miso paste and water. Here are some suggestions of things that you can add to that:

    soy sauce
    a small grating of ginger
    fish sauce
    kelp powder
    rice wine
    sesame oil
    seaweed
    chicken stock
    fish stock
    veggie stock

    For the noodles:
    Soba noodles can be found in the Asian section of the grocery store. You can substitute other kinds of noodles, s/a bean thread noodles, Mai Fun, Ramen noodles, or even angel hair spaghetti. I like soba the best. I cook the soba noodles in a separate pot of boiling water and only about 7/8 done. They will continue cooking, once in the bowl with the miso broth.

    For the Toppings, the sky's the limit! Last night I put in the following:

    Artificial crab legs, shredded
    Baby bok choy, chopped
    Baby Shitake mushrooms pre-cooked in soy sauce and sesame oil
    1-egg Omelet, cooked very thin, then rolled and sliced
    green onions, chopped
    Nori, thinly sliced into ribbons
    chili oil

    You could also add in a leftover piece of chicken, or other meat. (In Hawaii it has to be Spam.) Add any kind of goodies you want. This can be a very healthful dish...or not, depending on what you add. It's not expensive to make and everyone in the family can add the toppings that they like.

    Oh...I forgot to mention that I also added some cubed tofu to the soup base. Good protein!
