    Now don't say yuck before you try it.

    RED BEET JELLY

    3 c. beet juice
    4 c. sugar
    1 pkg. powdered fruit pectin
    6 oz. raspberry-flavored gelatin

    Bring juice to a rolling boil; add the gelatin and fruit pectin. Boil 1 minute, stirring constantly. Remove from the heat and add the sugar. Bring jelly to a full rolling boil after the sugar is added. Stir well and pour mixture into jars and seal.

    You can use the juice from canned beets....or if you grow beets, cook them and save the juice.

    I love this! I hadn't used jello with it, but that should be a great flavor. I always label the top of the jars "B Jelly", and most people think it's berry, or something similar! My kids ask for a few jars of it from their Gran every year.
