    Kielbasa hot dogs! Sliced in half lengthwise and heated to create reasonable-sized hot dogs. Add chile, relish, etc. For no carb, I dice the sausages into cubes.

    Sirloin on the grill (by DH). I’m not a big steak person but he likes it and we need to get it out of the freezer.

    Since we are in the middle of a snowstorm that will continue thru the night, it was a good day to make a big pot of chili. Will serve with crackers and cheese and watch the snow continue to pile up.

    We are having crustless quiche with ham tonight. I got the recipe from Joy Mangano many years ago. My husband who would never try quiche, loves it. When I first made it I told him it was a new egg dish recipe. LOL

    My go=to meal when I'm feeling uninspired is a cheese omelet. That goes over well with DH and can use an assortment of leftover veggies and meats.

    I made King Ranch Casserole, but with beef fajitas. I had a frozen bag of cooked strips, which I thawed in microwave and chopped the strips into pieces. Put in iron skillet, added onions and green peppers (frozen), can of ro-tel tomatoes and chiles, cream of mushroom soup, and grated cheese. (Low carb version. Left out corn tortillas.) Topped with sliced black olives and baked in same skillet for less cleanup. Will do that again.

    I made this but added a diced onion and fresh ginger to the butter and sauted them. I am liking the wild caught Argentine pink shrimp I get at Costco.

    I enjoy reading all the meal menus. Our supper tonight are leftovers from a local Hibachi grill from last night. We haven't been there in over five years and the prices were shocking. I took home all the leftovers. LOL
