Back in 2005, my wife and I were repairing and repainting the inside of our house prior to moving back into it. We were “camping out” in the house while we were working on it, and we had only a small crockpot with us to cook with. I went across the street to the supermarket and bought a whole chicken, two potatoes, and two Jalapeno peppers. Sliced the peppers and potatoes in half length-wise and put them in the crockpot with the chicken and a little salt & pepper on low for most of the day.

That evening, the chicken came off of the bone with a fork. The potatoes soaked up most of the “hot” from the peppers, so you could control how much hot spice you got with each bite by the size portion of potato, and the chicken itself had only a hint of the Jalapeno taste. I called my simple spicy chicken dish “Pollo de Pobre”, because (at that time, at least) it was a very inexpensive and easy meal. We’ve fixed it several times since then, and added another vegetable side dish at times.
