Welcome! It is wonderful to have new quilters, and there certainly seems to be enough experience here to help someone who wants to learn.
My suggestion is something like a tripple rail fence or a log cabin. My son did a report on quilting when he was in the first grade and made a quilted pillow to go with his report. He didn't do a perfect job, but it was a good starter quilt (and small to keep his interest up until completion) and only requires 3 fabrics.
