I made a yeast type banana bread last week, sweetened with Stevia.
1 1/4 cups water, 2 mashed very ripe bananas,3 TB olive oil or whatever oil you like,
8 packets of stevia, 1 1/2 cups bread flour,1 1/2 cups white whole wheat flour; you might need a bit more,(I use King Arthur flours), 1 1/2 tsp salt, 1 package rapid rise yeast(Red Star is my favorite).
I use my bread machine to mix everything and for the first rise, then grease and flour a large loaf pan and let it rise until doubled. Preheat oven to 350f and bake for 40 minutes. Let it cool 10 minutes after its done, remove from pan, let it cool completely on a wire rack before slicing.
