I like what Rob said. I would SID around the whole off center star. You did such a good job piecing. Say each strip is 1". I would make concentric stars (echoing) every 2 or 4" by Using the piecing lines (SID) where you can and FMQ in between. I would use painters tape to make it easier to see what line to stitch. That way, like Rob said, you can go back later and fill in if you want.
