Hi! Here is the recipe my mom and I use for meatloaf, the meat mixture also works great for stuffed peppers as well.
2 lbs ground turkey
1 box frozen spinach, defrosted in the microwave or (2) 13.5 oz cans of spinach drained
1 medium onion, finely chopped
3 cloves of garlic or 1 teaspoon of garlic powder
3/4 cup bread crumbs
1/2 cup of parmesan cheese
brown sugar
ketchup
Instructions: In a medium bowl, add the ground turkey, spinach, onion, garlic, bread crumbs and parmesan cheese and mix well. Place mixture in your favorite meatloaf pan. In a small bowl mix together a little bit of brown sugar and ketchup. Spread over the top of the meatloaf. Bake in a 350 degree oven for 1 hour. You can freeze the leftovers or use it for meatloaf sandwiches.
