    I was single for years. I still used my crockpot, but I froze about 1/2 of what I cooked. It made dinner a snap on my lazy nights...lol

    Nancy Jean - go ahead and cook this good stuff and freeze the leftovers! I use the pint or half pint plastic box containers and freeze single servings. Most of this stuff freezes real good. I finally tried freezing my potato soup, which I add cheese to, and it freezes great. I did not think I could freeze it because of the cheese but it works fine.
    It is almost impossible to cook anything for one or two people but my freezer is a life saver.

    I am very spoiled and I only cook when I want to. My husband is happy with the variety I have in the freezer and he just helps himself.

    Went back to Mass. last week to visit my sister and get caught in Snowtober! Kept the fireplace going as no power, heat, telephone, cell phone service, TV, computer, or WORKING TOILETS.
    Back to Oregon, now for creamy potato soup.
