    Default Lemon Curd

    Help!! I need it for a filling in a cake. Made some yesterday and it is not good!! MUST have and be done decorating before 8AM tomorrow. Anyone have a tried and tried recipe? I have lots of lemons!!

    Food network has a good microwave recipe quick and easy and tastes great.

    Do you have a vitamix or other powerful blender? I make this in my vitamix on the hot soups setting. Perfect every time http://www.thisgrandmaisfun.com/easy...er-lemon-curd/

    Oh, and I put everything in at the beginning too.

    Thank you for the link, that sure is a quick way to make it. Now I need a couple fresh lemons.

    Ended up using a combination of recipes. Turned out well! The use of a blender from Misty's Mom suggestion, to mix the sugar and the zest before cooking worked great. Made the zest super fine, without losing flavor!!

    My blender cooked it at the same time it was blending. No need for more pans.

    OMG! Saw this a few days ago and finally tried lemon curd in my Vitamix. Great so far, its still cooling. I found a recipe that only uses 3 eggs, and a little less of the other ingred. Utube, William-sonoma. I can see I have a few new recipes to try. Thanks for posting!
