Does anyone have a good cheesecake recipe

This is the cheesecake recipe my mum used to make us when we were kids. It's a no bake recipe and absolutely delicious. The words are hers!
8 oz cream cheese
3 oz caster sugar
vanilla essence
Juice and grated rind 1 lemon
2 large eggs
1 envelope gelatine
6 oz double cream
6 oz digestive biscuits [I think you call these Graham crackers in US]
3 oz melted butter
coarsely shredded chocolate
icing sugar
Soften cream cheese and beat with the sugar, a little vanilla essence, lemon juice and rind.
Beat in the egg yolks then stir in the dissolved gelatine and fold in the whipped cream. When at the point of setting, fold in the stiffly beaten egg whites.
Spoon the mixture into a deep (lined) cake tin 8" in diameter. Crush the digestive biscuits and mix with the butter. Spoon evenly over the cheesecake mixture. Refrigerate until set. Unmould cheesecake carefully on to a plate and peel off lining paper (greaseproof).
Sprinkle with a little chocolate. Dredge with icing sugar.
I seem to remember that you needed a lot more containers than you thought for the mixing process - about six or so I think. Good luck!
