We had fried chicken tenders, fried eggplant, and mac & cheese. And rocky road ice cream for dessert.

We have been doing a lot of salads lately and lots of tomatoes (from the garden). We have lots of squash too. Getting ready to start canning.

Last night I cooked fresh salmon for the first time ever. When Pat came home I told him he would never guess in a million years what we were having for dinner. His answer: "Salmon?" lol (He knows I don't like fish) But it was yummy! Definitely a do-again.

For today, I have a Safeway pizza in the fridge. It only cost $5. Last pizza we got at the pizza parlor in town was $24.

Something easy and quick that can be thrown together for me. I have some ham chunks I had frozen a couple months ago and I plan to make a hot dish with ham, slices summer squash (overrun with them), maybe some corn, a bit of onion, green pepper and a from scratch white sauce with Monterey jack cheese or paramesan or both. Lots of parsley in the garden too so will throw some of that in too. Romaine lettuce salad. Pineapple upsidedown cake with ice cream, left over from last night, for dessert.
