    I was reading this discussion today and I see a few requests for the Mini cherry cheescakes. Here is the recipe I have:

    Mini Cherry Cheesecake

    2 8oz. pkgs cream cheese
    ¾ cup sugar
    2 eggs
    1 teaspoon vanilla
    1 Tablespoon lemon juice

    Vanilla wafers
    Cherry Pie Filling

    Use foil muffin cups. Put vanilla wafer in each cup. Fill with cream cheese mixture. Bake at 325 for 15-20 minutes on cookie sheet/muffin tins. Cool and fill indentation with cherry pie filling. Add whip cream (optional). Fun and oh so delicious!
