We are expecting snow today as well. It is very cold and dreary right now. The snow is supposed to come down to lower than the 2000 level and we are at 2400. It will be the 2nd time in 2 months that we've had snow. Weird weather.

Me too. This morning it was so cold and I felt like a donut. So my dh and I took a drive to the store and got one. I sure enjoyed it but feel miserable now.

I have a recipe (new to me) that I think you all will enjoy.

Beet Jello

1 (16 oz) can shoestring beets (I couln't find this, so I cut up the sliced beets)
1 lg box raspberry Jello (sugar free)
1 (8oz) can crushed pineapple
1/2 c diced celery
4 tbsp vinegar
2 c water

Drain liquid from beets and pineapple into saucepan. Add 1 cup water and bring to boil. Add jello and stir until disolved. Add 1 cup cold water. When cool add vinegar, beets, pineapple and celery. Pour into bowl or mold and chill overnight.

I don't know the calories.

gamcox............thanks for the recipe it sounds really good. too bad I don't have jello in the house and the church lasy went shopping this morning. I do have everything else. I have plain gelatin maybe I will use that and instead of water fruit juice.
