I am just getting into quilting, but have been a sewer as long as I can remember (72 years old now). I have collected fabric over the years, but your stash scares me. I always bought fabric in 1 and 2 yard pieces depending what I planned to do with it. What is the average size one buys just to have on hand with no specific project in mind?

That's a loaded question, lol. I'm partial to FQs....but a couple of quilter friends told me they never buy less than one yard when they are buying without a project in mind.
Me - I go 1/2 yard all the time....couldn't afford one yard of multiple fabrics!

sometimes I play a game with my self. I select a pattern to sew and the rule is......I have to use what I have for every thing. I don't allow myself to buy anything for the quilt. I have even gone so far as to call a retreat for the weekend with my mother and my sister and I furnish all the fabric. When I close the door on the sewing room, IT MULTIPIES ALL BY ITS SELF> GOOD LUCK.

Oh My! It looks like you need a quilt-a-thon to get rid of some of that fabric.
