Same for me on the scrappy log cabins but also scrappy bindings on charity quilts. I just roll them around my hand, fold in half and store in shoe boxes until I have enough to use. I always seem to have leftover binding.

I save the left over binding & sew it together until I have enough to bind scrappy quilts.

I cut all my bindings the same size no matter what the pattern calls for and use the leftovers for a scrappy look.

Thank you for creating this post. I share your need to know but in a different sense. My strips are cut selvage to selvage and have not been sewn. I have just finished my 2nd Bargello and feel like I am in a '2 1/2" strip' forrest. I am torn between putting the strip(s) back into the ruler folded fabric it belongs with in case I use that fabric for something that uses 2 1/2" strips or just sewing the 2 1/2" strips into something to use up the fabric. ??

They are also great for binding mug rugs too! I have a big plastic jar that I drop all my extra bindings in and then use them to bind scrappy quilts or mug rugs. Even bind doll quilts with them.
