One- med. potatoe- boiled and drained.
    One box powdered sugar
crunchy peanut butter ( your choice)
Mash Potatoe into powdered sugar, Roll out , fairly thin, on buttered surface Then spread with peanut butter, roll up, place in frig. let it get firm. then slice. Haven't made this yet but my friend says her family loves them, I was concerned about not enough wet ingred. she assures me a med potatoe is enough liguid in the pota. I'm going to try it soon, i usually don't give arecipe until i try it but i know the source. Hope you enjoy :D

When I taught kindergarten we used to make these candies with the kids. I'd forgotten all about this recipe. They're real sweet if my memory serves me well.

Hi, this is my first time to reply but I had to tell you that I have made the
potato candy for years. My grandmother gave me the recipe . Its great and make alot. But I have found that no two medium potatoes are the same size, so I always have extra sugar on hand. also like the smooth

p eanut butter and have used preserves but I prefer the peanut butter.

I remember this candy from 4-H. I had lost the recipe until a few yrs. ago when I found it online.

I remember making it also with the potato/sugar dough and adding peppermint extract and green and red food coloring....of course, it came out mint green and pink. We dropped it on wax paper and let it firm up...I think.

I'll try it, too. I wonder if a person could put the sliced candy in the freezer for a couple minutes then dip the slices in chocolate???? I might try that. Thanks for sharing.

I would suggest freezing the candy and dip quickly. I remember it to have a rather soft texture
