If I don't need to tie something up with them, off to the trash they go, geez I have enough scraps from my regular quilting and sewing!!!!

I save mine and put them in a pretzel jar, I now have 3 large pretzel jars full of salvages and pieces.

I usually cut as close to the selvage as possible - so usually there is only 1/4 to 1/2 inch cut off. I've started to cut next to the plain edge, so if there is a wider piece left on the "pretty" edge, I'll save that. Only because some people here have been asking for them.

I toss 'em in the pile with other snippets that I donate to a quilt shop that collects them for a pet shelter. They use all those tiny snippets to stuff pet beds. The selvedges don't appeal to me, but a dog or cat won't care what made their bed soft and warm!
