A good place to look would be via the celiac website ..... and to ask Mr. Google!

Here are a few easy things to serve others that don't call for out of the way ingredients:

A PB Cookie Recipe:

Also see the Chocolate Coconut Macaroon recipe in this part of the forum.

Here is a blog full of slow cooker recipes that are almost all gluten free: http://crockpot365.blogspot.com/

In the baking section you can buy Gluten Free Bisquick for an easy way to make pancakes or other quick bread item.

Just made gluten free cookies today. I buy corn flour at the bulk food store. I use a regular Peanut Butter cookie recipe and substitute the corn flour for reg. flour. You have to fiddle with the recipe a bit and add a little more flour so it can be rolled into balls and pressed down with a fork before baking. Corn flour makes the cookies a little grainier than reg. flour but they are still good. (make sure to check your peanut butter is gluten free before using)

best one for Christmas cookie; 1 c. peanut butter, 1 C. sugar and 1 egg; mix bake by spoon fulls then add hershey kiss when it comes out of oven. I don't have the exact time here with me but not long. I just found out that Bisquick makes a gluten free mix; another quilter says it's ok for flour free. You might try them and they have recipes

There are many excellent GF cookbooks, you might want to check your local library or even a used bookstore. Having been on a GF diet for more than 10 years, I have learned the best substitute for wheat flour is a combination or other flours (rice, tapioca, cornstarch, potato starch). You will need to add xanthan gum if baking. The flour mix formulas can be expensive due to multiple ingredients, so many people prefer to buy prepackaged mixes. I like GF products by Bob's Red Mill company, but there are other good ones also. Best of luck. Your celiac relative will sincerely appreciate your effort!
