Strips that are 2.5 can easily be cut into 2.5x2.5 squares for 4 patch, 9 patch, or 25 patch. They can also be made into a courthouse square block, or Chinese coins, or rail fence. I've forgotten the name of another pattern I'm thinking about, but it looked like a brick wall.

I am currently working on a queen size quilt for my bed using 2.5 inch (finished) blocks cut from sewing the strips together (six different fabric strips) and then sewing these together end to end with six strips in each row. I have saved tiny-flowered vintage-looking sheets (100% cotton) for some time (bought at Goodwills for @2.00 a sheet.) Colors are pink and white predominately. So far it is on design wall for pattern placement , but I think I'm going to like it. Will back with muslin for that old-fashioned look. First time in along time that I am making something just for me. As I get further along I will post a picture. Haven't done that before but will try.

Thanks for all the responses; now, there are so many new patterns I've got to try! Since I love to do "sampler" quilts, I believe one of the quilts I'll make with the strips will be a sampler of the different patterns.
Yesterday, I did start a log cabin quilt. I'm using 4.5" squares of yellow for the center; the completed size will be 14.5". I'm also thinking of adding sashing of dark strips.

That is really pretty. I found a similar pattern call "Charlie Brown" in my stash of patterns to try some day. Just pulled it out last evening. Think I may give it a go and clean up the scrap bag, just a little.

Rail Fence - Basketweave, there are lots of them. Sew some strips together, lengthwise and cut across to make blocks and sew back together. 2-1/2" strips are used in a lot of quilts.

I found a pattern on you tube called the 1600 jellyroll quilt using 2.5 in strips. I made on and it was quick. Try it
