I would either buy just the egg whites or use the yolks for home made lemon curd. If I use egg yolks in a recipe and don't use the whites, I freeze the whites and use them at another time. So for a recipe like this, I would use frozen egg whites. Good luck!

I love homemade ice cream and the recipe calls for 12 egg yolks!!! Just what you would have...
