    My mom has been making this cookie since we were kids and now I make them as part of my Christmas cookie trays:

    Hedgehogs

    2c shelled walnuts 1 c brown sugar, firmly packed
    1 c pitted dates 2 eggs, slightly beaten
    2 c shredded moist coconut

    Put nuts and dates through a food chopper, using coarse blade. (I buy chopped dates and just chop the walnuts coarsely). Mix with 1 1/2 c coconut, sugar and eggs. Set oven for moderate, 350 degrees. Shape mixture into rolls about 3/4-inch thick and 2" long. Roll in the remaining 1/2 c coconut. Place on a greased baking sheet and bake 10-12 minutes, until light brown. Makes 3 dozen,.

    Note: I measure out the coconut for the cookie dough but I find that it takes more than what they say to roll them in, so I just put some in a flat bowl or dish at a time and add more when it runs out. Everyone loves them when I make them. If you make them, let me know how you like them.

    I made two date and walnut loaves last week.... very nice.... also keep dates whole and wind some thin narrow strips of bacon around them.... put in oven for about 20 minutes or so... really, really nice... I do them at xmas time.

    Oatmeal raisin cookies made with chopped dates instead of raisins. Yummy.
    Brownies with chopped dates.
    Zucchini bread with chopped dates

    Anything you can put raisins in you can substitute chopped dates.

    I usually make these at Christmas, my family loves them. Also, did you know you can freeze the dates. I keep them in the freezer for several years, just take out what I need and pop them back into the freezer.

    Crispy Date Bars

    Amount Measure Ingredient -- Preparation Method
    -------- ------------ --------------------------------
    BASE
    1 cup flour
    1/2 cup brown sugar
    1/2 cup butter or margarine, softened
    FILLING
    1 cup dates, chopped
    1/2 cup sugar
    1/2 cup butter or margarine
    1 ea egg, well beaten
    2 cups crispy rice cereal
    1 cup nuts, chopped
    1 tsp vanilla
    FROSTING
    2 cups powdered sugar
    1/2 tsp vanilla
    3 oz cream cheese, softened

    1. Preheat oven to 375ºF. Combine Base ingredients and mix until crumbly.
    Press into ungreased 11x7 or 9" square pan. Bake at 375º oven for 10 to 12
    minutes or until golden brown.

    2. In medium saucepan, combine dates, sugar and butter/margarine. Cook over
    medium heat to boiling, stirring constantly; simmer 3 minutes. Blend about
    1/4 cut hot mixture into beaten egg; return to saucepan. Cook until mixture
    bubbles, stirring constantly. Remove from heat; stir in cereal, nuts and
    vanilla. Spread over baked base; cool.

    3. In small bowl, combine Frosting ingredients; beat at low speed until
    smooth. Spread over filling. Cut into bars.

    ok, back home and found the receipe
    ingred
    1/2 c butter
    1 c wht sugar
    2 beaten eggs
    8 oz chopped dates
    1 c all purpose flour
    1 tsp vanilla
    1/2 tsp salt
    1 c chopped nuts
    2 1/2 cup rice krispies

    in saucepan: butter, eggs, sugar and dates. bring to boil over med heat stirring constantly. turn heat down to low, continue stirring and cooking for 5 min.
    add:
    1 c flour stir and cook another 5 to 7 min. remove from heat add salt and nuts, vanilla and krispies. mixture will be stiff and hard to stir. cool slightly till cool nuff to handle.do not refrigerate before you shape them. Now, roll and shape into the shape of a strawberry. roll in red sugar. I use canned green icing to make the green leaf toppers.

    Date Nut Bread

    2 – 8oz pkgs dates cut up
    2 c boiling water
    2 c sugar
    ½ c shortening
    2 eggs, beaten
    4 cups sifted flour
    2 tsp. Baking powder
    1 tsp salt
    2 tsp vanilla
    ¼ c milk
    1 cup chopped nuts

    Pour boiling water over dates. Let set.

    Cream sugar and shortening, add eggs and dates and vanilla. Add dry ingredients with milk, add nuts.

    Pour into 5 #2 cans which have been greased. Fill 2/3 full.
    I use the small size bread pans.

    Bake @ 350 oven about 1 hr 20 min.º

    Wow! I thought I had a lot of dates but probably not enough to try all these recipes. Thank you so much!! I'm am so anxious to try out so many of these but will have to wait a couple of days...... my DH and I have been doing a remodel job on the cabin and the stove is supposed to be hooked up this week. We had to unhook it and move it to the new kitchen on Saturday. Anyway, you all are great with all these recipes. I'll make sure and report back when I try some.
