    Default Sweet Potato Cake

    Quite a moist cake and very delicious!!!

    1 cup oil, 1 cup sugar, 4 eggs, 2 cups self raising flour, 1 tsp bic. soda, 2 tsp ground cinnamon, 2 tsp ground nutmeg, 1 tsp salt, 6 cups of grated sweet potato, 1/2 cup crushed walnuts.
    Bake on 180° C for 50-60 mins.

    Cover with icing to your liking.

    A great cake for this season now in Australia where you find sweet potatoes everywhere.

    Elfi it sounds delicious, but what is 180* c. Would that be 350* for us in the US?. Thanks, Mary.

    Yes, Mary that would be about 350° Farenheit Good luck and let me know how you liked it!!!

    Sounds yummy, much like carrot cake. Do you use cream cheese icing or do you favor something else?

    Do you grate the raw sweet potatoes, par-boil, or bake them first? Sounds yummy! My husband is from the south and loves anything with sweet potatoes, usually just baked with butter and brown sugar. This is a cake I'm definitely trying! Thanks.
