I had exactly the same problem and just used lots of duct tape....and cleaned up the mess afterward. On mine, all of the raw edges are completely taped.
When I bought my foam several years ago, I could only get small sheets of the kind of foam that makes millions of those little balls. A much better option (for anyone just getting into this) is the Dow brand rigid foam insulation board...it's blue and comes in 4 x 8 foot sheets. I bought it in 2" width for a design wall and it was so much easier to work with.
Somewhere on the board is a post I did a couple of years ago...I think it's called My Version of the Foam Table where I show how I adapted Marguerita's excellent design by covering all of the pieces in oilcloth. It definitely was worth the extra effort and cost of the oilcloth.

Clear packing/mailing tape is good. I actually hold better than duct. When it's foam board insulation, you just can't get rid of the little balls. But if you have pets you definitely want to clean them up immediately. Don't want them to injest them, can cause a lot of veterinary problems.
