Number 1 is nice, however, on quilts 2 and 3, I'd like to see mitered corners to give the quilt some jazz.

All are nice, but for me number one (1) is the one. It really frames that lovely quilt so nicely.

I agree. No. 2 with mitered corners. That's a beautiful quilt and border and the mitered corners will be a great finish.

Simple mitered corners on #2 would be perfect if there is enough fabric. Otherwise, I would go with #1.
