I would use stitch in the ditch on the first one and the other two, maybe 3-4 inch cross hatching or simply stitch around the flowers. They are all very nice, your DH has good taste and you did a great job on them.

If you are not in a hurry, many quilters (including myself) love to handquilt .
That would ease the pressure on you and the pieces would be done the way you enjoy.

If you are not in a hurry you might look into having them handquilted. Many quilters (including myself) truly enjoy hand work and it would be taking the pressure off you. Good luck!

I don't have any suggestions for fmq, I just want to say those fabrics are absolutely drop dead beautiful!
