For me, it would depend on what I have. I agree that stripes make very, very effective binding.
But, if I didn't have stripes in these colors, I'd just make the first one scrappy bindings in these two colors and for the second one, I'd choose bindings from all the colors in the quilt, except white. I like my binding to contrast most of the time.
But do what you like.

My first thought for your strip quilt is to use white... I know. I like it as it is but we need some sort of binding.
For your second quilt I would add a small border, may be 1 1/2 " or 2" then bind it with one of the colors you used in the quilt.
As far as quilting is concerned, are you handquilting or machine quilting?
