    Default Lemon Meringue Pie-in the Microwave!

    Yesterday I made a lemon meringue pie for our in-home celebration of the 4th of July. For the first time I did the filling from scratch in the microwave instead of standing over the stove stirring and waiting for it to thicken. I will probably never go back to the stove top. I also used the Pillsbury pie crust.

    I used the following recipe except that I used half fresh lemon juice and half bottled (since I ran out of the fresh). Guess I modified it also in that I used 1/2 cup of cornstarch instead of the flour/cornstarch that the recipe called for. ANYWAY, it turned out great and my DH loved it!

    Step out and take a chance. The worst that can happen is that your lemon filling is runny and your meringue weeps BUT you would still have a lovely lemony filling to eat and the meringue would still taste great. You never know, it just might turn out better than you think. Lots to read on the internet about how to do the egg whites.

    Thanks so much for this recipe. I agree with you that not having to stand over a hot stove stirring is a good thing.
