Default Sweet Potatoes

Does anyone have a simple Sweet Potatoes casserole to take to a Church social? it will sit 2 hrs before church, so im guessing Marshmallows wont work. Thanks

This is my favorite. I cut the recipe from a magazine years ago.

I like my sweet potatoes by themselves. I give the skins a light coat of olive, put them in a casserole dish with a bit of water and roast them in the oven until tender. It takes quite a while so sometimes I cut them into 1 inch slices before going in the casserole dish if I I don't have a couple of hours.

Our Thanksgiving Favorite

Sweet Potato Soufflé

3 C mashed sweet potatoes (3 large potatoes)
1/2 to 3/4 C sugar
1/4 C melted butter
2 eggs
1 t vanilla

Mix together and pour into buttered casserole dish (I use 9x9)

Topping
1 C brown sugar
1/3 C flour
1 C chopped pecans
1/4 C melted butter

Bake 350 for 30 minutes

This is how I make them and even those who hate the sweet potatoes with marshmallows love them!! I have to admit, I really hate the canned sweet potatoes with marshmallows on top!! No more canned sweet potatoes!!!!

Thanks for all the Recipes....I think i'll do the Sweet Potato Souffle...sounds so good.

Default Orange-Glaze sweet potatoes

ORANGE-GLAZE SWEET POTATOES (12 servings)

6 sweet potatoes, boiled until tender or canned
1/2 cup brown sugar
1 Tbsp cornstarch
1 cup orange juice
1/2 cup raisins
1/2 cup chopped walnuts or pecans
2 tsp grated orange rind
Dash of salt
1/4 cup butter, cut into bits

Remove skins from sweet potatoes and cut in half. Place cut side down in shallow baking dish.
In medium saucepan stir together brown sugar and cornstarch.
Gradually stir in OJ until smooth.
Stir in Raisins, nuts, orange rind, and salt.
Bring to boil over med. heat, stirring constantly.
Allow to boil 1 minute.
Pour over sweet potatoes. Dot with butter.

Bake 350 degrees for 20-25 min or until bubbly.

This is gluten free and can be made dairy free also!
