I would hesitate to even try it. Maybe other "sugars" might work, like xylitol or erythritol (they have the same volume as sugar), but I wouldn't bet on it.

I think I saw something like that in a search for sugar free fudge. You might try that. There are other sweeteners that might work as well. I like swerve but I think you can buy that without a brand name on Amazon.

Lots of great recipes on Pinterest. Look up low carb fudge recipes. Most non sugars can be substituted.

Thanks all! I have never heard of Swerve but just read up on it some. Very expensive online. I will have to check it out at our Costco. I have not used Stevia very much but have some on hand. I didn't know it has an aftertaste.
For me xylotol has a laxative effect so that is out.
This fudge is for gifts so I think I will stick to the original recipe just to be on the safe side. I would hate to waste money and ingredients with less than stellar results.
I might cut the recipe way down and experiment with a very small batch. If I get brave enough that is.......then I will share my results.

I don't know if she has fudge with stevia. But there is a blog: chocolate covered Katie that uses a lot of stevia and has other somewhat healthier sweets. I have made several of her recipes and they have all been tasty.
