Yes, you could cut your layer cakes into 4 - 5" squares. Sashing cut 1 1/2" will finish to 1" which is usually as narrow as I like to go and still have some control. I like the pattern you picked.

Lots of other good masculine patterns on the thumbnails including several that look like the same
pattern with fabrics placed differently. Hummm. Maybe my answer to a background for grandson's quilt
which I have just been "frozen" on. (Can't even get "out of the gate.") Thanks Meyert.

I took two layer cakes and cut them in to 2" strips and then sewed 6 strips together and laid it out like a rail fence.

Each row would be the alternate of the one before. Then I used 2 1/2" binding. My husband loves it. You can make it as long and wide as you like.
