Of course you can make bread without salt. I did that regularly, but not on purpose. Every once in a while I would forget the salt. The bread rises much faster without salt, so you get your bread sooner.

I use my bread machine just for mixing, kneading and first rising. I let the dough rise in a loaf pan and bake in the oven. I can't get the machine to bake a nice loaf.

This is the one we use at church:
2 1/2 c. flour
2 1/2 c. whole wheat flour
1/2 tsp. salt
2/3 c. oil
1 1/4 c. milk

Combine flours and salt in bowl. Mix oil, milk and honey together and add all at once to dry ingredients. (I always mixed the milk and honey together first and microwaved it for 1 1/2 min. to blend better. It got lukewarm but not hot). Pat into ungreased jelly roll pan, 1/2" thick. Bake at 350 for 30 min. Cut immediately into cubes while still hot. Let cool in pan before removing with a spatula.

I have a Zojirushi that I bought probably ten years ago, and make one or two loaves every week. It is a workhorse. I also mill by own flour with a Wondermill.

So funny this came up....I haven't used my bread machine in years, and have been trying to decide whether to get rid of it. I thought I would try it again to see what I thought. My grandmother used to bake bread by hand and whenever us kids would visit she would make a couple of loaves. We only visited for the day, but by the time we left we would have eaten both loaves. I would like to find bread as good as hers without all the work. The first loaf I made in the machine, I didn't use bread flour. I want to say it came out dense, so I bought bread flour. My second loaf came out well enough, but not like grandmas. I may try the kneading in the machine next and baking in the oven to see if it comes out better. I don't go through a lot of bread, so this takes time between loaves. I'll see how it goes.

I am using my third bread machine and I love it, but I still prefer making bread by hand. Kneading the bread by hand for 10 minutes makes the best loaf of bread. DH likes this bread for toast with breakfast---slice, butter and broil in the oven, much better than the toaster. I usually make the dough in the machine for rolls...Do you make more yeast breads in the winter???
