You could make a cute quilt if you have a child's novelty fabric to feature...just alternate simple 4 patch blocks of the other fabrics between whole squares of the novelty print.
Or, for variety, l've sometimes taken the basic 9 patch, and stretched it into a rectange,( see my avatar photo).

My absolute favorite is Boxed Squares. I have made this thirteen times. You can make the blocks any size you like, and it is incredibly easy, but can be very impressive when you use a lot of colors.

If you have a focus fabric. I think it is fun to make squares of that say 6.5” and then frame them with hourglass blocks and create a square in a square effect.

I think my favorite go to pattern for a quick quilt is Disappearing Four Patch. It's great with just two fabrics.

This is my favorite quick pattern. It only took two days for a baby quilt! You can make it any size you want by adding more blocks.

The pattern I often use for baby quilts is all half square triangles laid out in the barn raising pattern (Big square on point.) I often will choose one color way with a solid white or white on white for the other half of the HST. It goes together quickly and seems to please the moms. I use 5 inch squares to start with and my finished quilts end up about 42 inches square. I am giving rounded finished numbers here because of my math challenge. Easy to add border or not.

Oh, making this comment makes me want to dive into my stash and get started on another one! Maybe turquoise or yellows/greens or........
