The difference between Judy niehmier paper piecing and others?

As others have said, Judy paper piecing and traditional paper piecing are exactly the same; Judy N just makes sure that instructors are good at explaining the process.
I looked up your LQS, and it looks amazing! There are Judy Neimeyer patterns that are complex, but also some that are relatively simple. Since they're using a simple pattern, and doing it over two full days, I think it would be an excellent way to learn paper piecing.
I learned paper piecing at a 2-day retreat, where we made Judy N's Autumn Harvest quilt. Everyone had their tops largely finished, even the ones who had spent years trying to wrap their heads around it before with no success. A good instructor, and time to work with them, make all the difference.

This might be a good place for you to start. Cristy uses glue, and does not sew through paper. She has a video on Craftsy (Blueprint now) too.

If you are new to paper piecing, I wouldn't start with those. Judy's patterns are very complex. You should be able to find a more beginner level class to take, or get some paper piecing books and teach yourself. There are lots of good ones, Carol Doak has authored many. Imho newsprint is the easiest paper to tear off. You can get it a Dollar store, usually in tablet form. I have also heard of ladies getting newsprint scraps from a Newpaper printer's office. I too am left handed. I have been PP for over 15 years and paper piecing is my preferred way to quilt and I have made a lot of paper pieced quilts. Being left handed does not change how you sew. I love the perfect points of paper piecing.

I called my lqs and they are going to let me know if they schedule a beginner Judy Niemeyer class. If I can come up with two more people that want to take it, they will start one! Maybe I should do a cl add and find some other local folk interested in learning to pp .

You might also check with the guilds in your area. They often have half-day or all day workshops featuring Judy Niemeyer. Our guild just did 2 in a row. One was a place mat size project, the other was a bigger twin size quilt. Or they may have members who would like to join you in a class at your local shop.
