Quilting with Minkee?
I have made several quilts with Minkee and have had to put the top as a backing and floated the minkee because the Minkee streaches. What do you find works best for you..

I've only made one quilt with minky backing but here's what I did - my backing was just barely bigger than my top so I heavily thread basted it to the top and sewed a muslin strip around the perimeter of the quilt. I loaded it on my long arm like that so there would be no stretching or bunching. It quilted up just fine and after I was done I cut off the muslin when I trimmed it up.

I had no problem quilting a top using minkee as the backing, and the minkee was mounted as the backing when I quilted. The minkee I had did not stretch both ways, and by mounting it with the stretchy part running east-west, the north-south orientation of fabric didn't distort. It quilted up quite well. I used my side clamps to gently hold the edges stable but not stretched.
